Black Bean Bowls with Mexican Rice & Creamy Taco Dressing

Vegan Black Bean Bowl | Mexican Rice | Creamy Taco Dressing

Vegan Black Bean bowls, my latest obsession! I will admit that I had this 4 times in the past week! I love mexican food and this is easy, fast and yummy! Throw whatever you have on hand in the bowl. I use black beans, corn, diced red peppers, diced tomatoes, shredded romaine lettuce, avocado, baked tortilla strips and mexican rice (recipe below). I then top it off with a creamy vegan taco dressing (recipe below)! You could also add veggie burger crumbles! You can serve it hot or cold or layer it in a pan to take along to a potluck!

Mexican / Spanish Rice:

Vegan Spanish Rice | Vegan Mexican Rice Recipe

1c brown rice or quinoa
1/2 med size sweet onion, diced
2 clove garlic, minced
3c water or veg no-chick’n broth
1/2 of 6 oz. can tomato paste

Spray sauce pan with non-stick cooking spray, add garlic and onion and saute on low until translucent, being careful not to let it brown.  Add brown rice or quinoa and cook about 5 minutes or until it becomes a golden brown color. Mix in 3c water and 3 oz. tomato paste. Stir and bring to a boil. Once boiling, turn the heat to low and cover. Simmer for about 20 minutes or until water is dissolved and rice is tender. Fluff with a fork.

Diced bell pepper
Diced tomatoes
Cubed avocado

Creamy Taco Dressing:

1 cup veganaise or other veg mayonnaise
1/4 cup soy or rice milk
1 tsp garlic powder
1/4 tsp salt
1 tsp onion powder
1 tbsp cider vinegar
1 tbsp packaged taco seasoning (or more to taste)

Blend all ingredients with mixer until smooth and creamy and chill for at least 1/2 an hour.
Dressing will thicken and as it cools.

Vegan Sloppy Joes 2-Ways

vegan sloppy joes with lentils

Sorry for the blurry pic. I was in such a hurry to eat these and the only thing I had nearby was my 5 year old dumbphone which takes horrible photos!

Sloppy joes have always been one of my favorite sandwiches. They’re fun, they’re filling and now they’re much healthier than the meatier version! They’re also a great dish to take along for potlucks.

Here are 2 ways to make sloppy joes. The first is my husband’s favorite and super quick & easy. Takes only 5 minutes or so to prepare. The 2nd way is my favorite and is the sloppy joe my mom would make for me when I was growing up but I use lentils in place of the hamburger.

You can make either of these recipes in a crockpot to take a long with you, just make sure to keep it on low so the sauce doesn’t burn!

Way 1:

5-Minute Vegan Sloppy Joes

1 pkg. Lightlife Smart Ground or your favorite burger crumbles
1/2 bottle of any original flavor bbq sauce

In large pan, add vegan burger substitute. Mix in 1/2 bottle (or more to taste) bbq sauce. Heat & Eat!

Way 2:

Vegan Lenty Joes

1 lb bag of lentils
1 cup catsup
1 tbsp. mustard
1 tbsp vegan worcestershire sauce
2 tbsp vinegar
4 tbsp lemon juice
3 tbsp brown sugar

Cook lentils according to package directions. Meanwhile, combine all ingredients except lentils in a large pan and simmer until thickened 10-15 minutes. Add cooked lentils to sauce and mix to cover well. Enjoy on a bun with vegan mayo & pickles.

Optional Add-ins:
Diced green peppers, diced onions, diced celery, diced carrots.
